Wild Amaranth (A.K.A. Pigweed, “amaranthus retroflexus”) produces both an edible leaf and grain seed, and is likewise medicinally active. The plant is a hardy annual in our climate, it might be a perennial in more mild climates. It readily produces large, pokey clusters of seed. The grains are fairly easily extracted from the seeding heads for use. Most livestock (yes, including pigs) love amaranth. Its hardy persistence and proliferation make it an excellent choice for supplemental animal (or human) feed.
